Roasted Lamb Shank Bone & Amarone Della Valpolicella Classico
Wine pairing notes
The soft Reius, with its well-balanced acidity, is aptly suited for pairing with this lamb. Its red fruit intensity (cherry, black currant, blueberry) and velvety tannins are in good tune with the Chinese spices in which the lamb has been marinated and those set in its crust. The hints of vanilla, oak, and chocolate soften and balance possible sensations of asperities of the spices aftertaste. The intensity of the dish meets the typical Amaronepersistence of the wine and the result is pleasant.
Ingredients
- 1 lamb shank bone
- 10g onion
- 10g coriander
- 20g diced scallions
- 20g sliced ginger
- 20g sliced garlic
- 5g thirteen spice mix
- 10g ground cumin
- 5g ground Sichuan pepper
- 10g oyster sauce
Method
- Wash the lamb bone and then combine with the onion, coriander, 5g of cumin, thirteen spice mix, scallions, ginger, garlic, and oyster sauce. Cover and marinate for 1 hour.
- Remove the lamb bone from the marinade, scraping off any excess, and then transfer to a hot oven.
- Roast until the lamb bone is golden brown, then sprinkle with the Sichuan pepper, the remaining cumin, and salt to taste.

Winery
Sartori winery is located in the Valpolicella area, in the province of Verona, and rises among the green hills dotted with vines, olive trees, and cherry trees. It was founded by Pietro Sartori in 1898 who, thanks to his entrepreneurial skills, has made it one of the most famous wineries in Italy, producing sober, elegant, refined but at the same time traditional wines.
The fourth-generation made up of grandchildren has managed to make these Veronese wines well known and appreciated all over the world. The winery is located right inside the beautiful seventeenth-century villa that Pietro Sartori bought at the time and which today is the symbol of this Italian winery.
