Golden Fried Crisp Milk & Rosa Regale Brachetto d’Acqui DOCG

Wine pairing notes

This light-bodied, highly aromatic Brachetto, with its distinctive notes of exotic fruits and red berries, enhances greatly the fragrance and the aroma of these creamy fried tubes. They help the wine to express all its aromatic peculiarities, in particular the intense aromas of roses and the flavors of almonds and nutmeg that complement the coconut in the mouth. A beautiful balance between sweetness and freshness.

Ingredients

  • 6 slices white bread
  • 320g fresh milk
  • 60g coconut milk
  • 20g condensed milk
  • 45g cornstarch
  • 4g granulated sugar
  • 5g salt

Method

  1. Sieve the cornstarch, add sugar, salt and pour in 100g milk
  2. Stir until dry ingredients are well diluted in the milk
  3. Pour in the remaining fresh milk, coconut milk, and condensed milk and stir well
  4. Keep stirring over low heat for about two minutes and when the liquid gradually thickens turn off the fire
  5. Turn off heat and keep stirring until smooth then pour all into cling paper
  6. Let it cool in the freezer for 2-3 hours
  7. Cut the white bread into squares
  8. Take out the fresh milk “cake” from the refrigerator and cut it into strips
  9. Wrap pieces of the milk cake in bread squares wrap and deep fry them in oil at 180° until golden brown

Winery

Castello Banfi

Banfi was founded in 1978 thanks to the will of the Italian-American brothers John and Harry Mariani. From the beginning, the goal of the two brothers was to create a state-of-the-art winery combined with the most advanced science in the vineyards for the production of premium wines. Together with the Mariani family, Ezio Rivella, one of Italy’s foremost oenologists, who understood that due to the richness of the soils and the privileged microclimatic position, the property would have a great capacity of development. 

In those years, the brothers, John and Harry, also purchased Bruzzone, a historic winery in Piedmont. Founded in 1860 and specialized in the production of sparkling wines, today is known as Banfi Piemonte.

The guide Zhong Can Yi Jiu and the program Chinese cuisines meet Italian wines are promoted by the Italian Wine Bank, a branch of the project MELIUS, both produced by The I Factor Limited. The guide is realized in collaboration with the Chinese Culinary Institute of the Vocational Training in Hong Kong, the Club China AIS (Associazione Italiana Sommelier) and the Italian Wines World Summit.

This guide is an unprecedented attempt to marry two great gastronomic cultures and artisanal producers: Chinese cuisines and Italian wines. This guide is the first of many steps in a grand project that will be fully realized over the next few years. Our mission is to give interpretive tools to the consumer as well as provide a point of reference for the Italian wine industry, as well as for contemporary Chinese chefs and restaurateurs operating in China, Hong Kong, Macau, Taiwan, Singapore and worldwide.
